Chocolate Chip Muffin Recipe

First, a basic chocolate chip muffin recipe, followed by ones with banana, orange, peanut butter, and pumpkin.

Chocolate Chip Muffins

3/4 cup milk
1/4 cup butter, melted
1 egg
1-3/4 cups flour, all-purpose
1/3 cup brown sugar, packed
2-1/2 teaspoons baking powder
3/4 teaspoon salt
1/2 cup semisweet chocolate chips
1/2 cup walnuts, chopped

Heat oven to 400 degrees F. Line 12 medium muffin cups with paper baking cups or grease bottoms only of muffin cups.

Beat milk, butter, and egg. Stir in remaining ingredients, all at once, just until flour is moistened (batter will be lumpy). Fill muffin cups about 2/3 full. Bake 18 to 20 minutes or until golden brown.

Banana Chocolate Chip Muffin Recipe

2 medium ripe bananas
2 eggs
1 cup brown sugar
1/2 cup butter, melted
1 teaspoon vanilla
2-1/4 cups flour
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/2 cup mini-chocolate chips

Puree bananas, eggs, sugar, butter, and vanilla until well blended. Add flour, baking powder, and cinnamon; mix until just blended. Fold in chips. Spoon into well-greased muffin pans. Bake at 350 degrees F for 10 minutes or until done.

Orange Chocolate Chip Muffin Recipe

3 cups all-purpose flour
1-1/4 cups sugar
2 teaspoons baking powder
1-1/4 cups milk
3/4 cup vegetable oil
2 large eggs
4 teaspoons orange peel, grated
12 oz. semisweet chocolate chips

Preheat oven to 350 degrees F. Line half-cup muffin cups with foil liners.

Combine flour, sugar, and baking powder in large bowl. Make well in center of flour mixture.

In another bowl, mix milk, oil, eggs, and orange peel. Stir milk mixture into dry ingredients (mixture will be lumpy). Add chocolate chips to batter.

Divide batter among muffin cups. Bake muffins until tester inserted into center comes out clean, about 20 minutes. Transfer muffins to rack.

Peanut Butter Chocolate Chip Muffin Recipe

2/3 cup peanut butter, chunky or smooth
2 tbsp. butter, melted
3/4 cup sugar
2 eggs
1-1/2 teaspoons vanilla extract
1-1/2 cups flour
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 cup milk
6 oz. semisweet chocolate chips

Preheat oven to 350 degrees F. In a large mixing bowl, combine peanut butter and melted butter; stir until well blended. Mix in sugar, eggs, and vanilla.

Combine flour with baking powder and baking soda. Add to peanut butter mixture along with milk and chocolate chips. Stir just until combined.

Spoon batter into 12 paper-lined 2 1/2- to 3-inch muffin cups. Bake 20 to 25 mins, or until muffins spring back when lightly touched in center. S

Pumpkin Chocolate Chip Muffin Recipe

1/2 cup sliced almonds
1-2/3 cups all-purpose flour
1 cup sugar
1 teaspoon pumpkin pie spice
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
2 eggs
1 cup plain canned pumpkin
1/2 cup melted butter
6 ounces chocolate chips

Heat oven to 350 degrees F. Put almonds on a baking sheet or pie pan and bake about 5 minutes, just until lightly browned. Grease muffin cups or line with muffin papers.

Thoroughly mix flour, sugar, spice, baking soda, baking powder, and salt in a large bowl.

Break eggs into another bowl. Add pumpkin and butter to eggs and whisk until well-blended. Stir in chocolate chips and almonds. Pour over dry ingredients and fold in just until moistened. Spoon batter into muffin cups and bake 20-25 minutes.
